wagyu steak with root vegetable gratin

I started a blog back in 2007  when I  left Buddakan Nyc  to Go to Paul Bocuse in Lyon france , and I realized I was in france I donot have time to write a blog . In between then and now , I went to  Puerto Rico after france  open  Koco at the El San Juan Hotel  After 2 years the  Economy and Tourism went down -
Next project  got me to the Royal Hawaiian  Azure restaurant ..  Had to turn that down  so I can accepted a job with Stephen Starr at Buddakan Philadelphia...  well more about that soon .. going to add some pictures  of  food life  and Philly !!!! Before we jump to Tashan Modern Indian Kitchen !
