Chef notes

I have this Blog to keep me energized and confident  in what I do and inspire to be .A great chef ..
I know I should write more it would help .
 But lately I just want to vent  about the decisions made in life and careers that I cannot control  .
This might not make sense to you but its clear to me .  And those old-world chefs. As you get older and look at all the bullshit- and lies in this profession and this world,
I now  see why chef work for themselves and have silent - very silent partners ...
 I know I am not great but its my constant drive to be great that has gotten me this far .
Now lays new challenges ahead the chef world is challenging its no longer how great you cook - who you studied under - the countless hour of training and dedication to a chef or a kitchen . Everyone has a concept or an idea of a concept  the want you to make it flourish but at what cost ,
to your talent - ideas-imagination knowing something can be perfected-elevATEd. when do we as chefs dumb ourselves down for an Idea.
when do we say yes to TV show for free P.R or endorsements when do we just Cook and put our Passion on the Plate . A Restaurant  was always an occasion and an experience, Look at our great chefs now  all they do judge people on cooking shows is that the new measure of greatness to become the next Judge on a food show . When do we see a return to Cooking.

Iron Chef Tasting Jose Garces




this is the image of the ticket menu from the kitchen, when iron chef jose garces came in ,it was truly fun cooking for him and his family , I remember the kids really like the lollypop  they notice   the inspiration from croquettas in the dish of  Malai kofta lollypop {an Indian vegetarian dish deconstructed to look like a lollypop bring us back to when we were a kid }, Jose kid and Mother ask for second order... the had about 14 different  dish to complete this complex tasting menu followed by a short kitchen tour ,and we spoke about the upcoming  Jose Garces Foundation..

Harrison Ford and Gary Oldman Show Up at Tashan

Two of the more famous people in the universe, Harrison Ford and Gary Oldman, showed up at Munish Narula's Tashan last night. The duo is in town filming Paranoia, which has also brought actor Liam Hemsworth and fiance Miley Cyrus to Philly.
HughE Dillon at The Philly Post said that executive chef Sylva Senatprepared an extensive tasting menu for the two stars. Narula told Eater that the two gentleman weren't fond of the wine selections, and went straight for two Indian beers, Kingfisher and Taj Mahal. Apparently, Ford was seeking out Indian cuisine, which is how he ended up at Tashan. "And, with Oldman being from the UK, it's prevalent over there and something he's very familiar with," said Narula.
Ford is looking a bit long in the tooth these days, but Oldman looks like he could reprise his role as Norman Stansfield from The Professional tomorrow if he had to.

The actors and friends dined at Munish Narula’s Indian restaurant.

Last night, legendary actors Harrison Ford and Gary Oldman dined on the chefs’ tasting menu at the popular Indian restaurant Tashan on Broad Street. (They’re pictured here with Tashan owner Munish Narula, left, and executive chef Sylva Senat, right.) Ford and Oldman are in town filming the movie Paranoia, the thriller film directed by Robert Luketic and also starringHunger Games actor Liam Hemsworth (Miley Cyrus’s fiance.) Hemsworth stars as “a blue-collar guy who is blackmailed by his boss into spying on a rival company.” This past week, the movie has been shooting at the Chestnut Hill home of socialite Martha McGeary Snider, which is standing in as the home of Harrison Ford’s character, Jock Goddard, CEO of tech company Trion. Oldman plays his nemesis, Nicholas Wyatt, owner of a competing tech company. It won’t be the first time Ford and Oldman clashed on screen. The two worked together on 1997′s Air Force One. The last few months have been a roller-coaster of emotions from the mental and to the honestly physical anguish of being a young executive chef ! We envisioned so much for this project !! Tashan modern kitchen lounge .
We Just won MainLine magazine best new restaurant 2012 July and August issue and Philly magazine has a best of issue that started with the best quote ever "for the hundredth time Tashan is not Tiffin "
as we all laugh because it's so true and a daily chant at Tashan, the rest of Philadelphia still do not understand Indian food needs to evolve to the next level .
Such as Mexican ! New American or American Nouveau.
All food and cuisine needs to evolve is it so hard to understand it time for Indian cuisine to be more mainstream without being ethnic or traditional.
