Chef thoughts : 2 years of Modern Indian Cuisine

The last few months have been a roller-coaster of emotions from the mental and to the honestly physical anguish of being a young executive chef ! We envisioned so much for this project !! Tashan modern kitchen lounge .
We Just won MainLine magazine best new restaurant 2012 July and August issue and Philly magazine has a best of issue that started with the best quote ever "for the hundredth time Tashan is not Tiffin "
as we all laugh because it's so true and a daily chant at Tashan, the rest of Philadelphia still do not understand Indian food needs to evolve to the next level .
Such as Mexican ! New American or American Nouveau.
All food and cuisine needs to evolve is it so hard to understand it time for Indian cuisine to be more mainstream without being ethnic or traditional.
